🌸A very unique Pumpkin Risotto
I received this recipe from my Russian old neighbor. I made it as an experiment and I liked it myself. I replaced sour cream with creme fraiche and added a tiny bit more sugar 😄😊
The decoration with the fried pumpkin cubes and seeds is my own idea
It is simple to prepare and ready within 30 minutes. Ingredients:
– 300 g pumpkin
-150 g risotto rice
-50 g sour cream (or creme fraiche)
-5 tbsp cane sugar (can be more)
-3 tbsp sunflower oil
-500 ml of water
-A piece of cinnamon
– pinch of salt
Add the rice with grated pumpkin in the pan with water and cinnamon and salt and stir well over low temperature until the water evaporates.
In another pan, at the same time add 3 tbsp of oil to cook the squash cubes until golden brown. Save it for decoration and then add the oil to risotto 🥄 In the end add sour cream and stir well to get a smooth risotto. 🥄Finish the risotto on a board with extra sour cream and enjoy with cinnamon powder and pumpkin cubes and seeds.🍽 👩🏼🍳💙😊 .
