Bolani Ajel ( بولانی عاجل )
Don’t know what to do with leftovers? Here is an idea 💡
I love to re(create) dishes from things I already have in the fridge. This stuffed tortilla or as I call it Bolani Ajel (quick bolani) is one of them. (Bolani is btw a traditional Afghan dish let me know if you also want the original recipe)
So for this quick but surprisingly tasty bolani you can use fridge leftovers like (mashed) potatoes, spinach, lentils or pumpkin.
So here are the ingredients I used:
Spices (cumin, coriander seedpowder, garlic powder, black & red pepper, salt)
The amount, all according to your taste and wishes, but for a tasty filling don’t hold back on the spices.
You also need something to “glue” the tortilla
So for the glue you need:
2 tbs of flower
6 tbs of water
Ensure that filling is at room temperature
Put the desired filling on one side of tortilla and grease the “glue” on the other side.
Bake at low temperature and slowly until golden brown.
Serve with Greek yogurt and (chatni) chutney. Enjoy 👩🏼🍳💙😊
