Bolani the original traditional recipe It is the most delicious vegan dish in the Afghan cuisine. It is fried half circle shaped dough with thin crust and a vegetable filling. You can use a variety of ingredients for the filling such as potatoes, lentils, pumpkin or leeks.
The process is a bit timeconsuming but so worth it. If you want an easy variant. I posted previously a easy recipe using tortillas.
For the dough you need:
1 kilo of flour (for 30 bolani)
3 cup of water
1 teaspoon of salt
1 tablespoon of oil
150 g extra flour for rolling
Make a nice and smooth dough with these ingredients. I do not use yeast, if you use yeast, you will get soft bolani. Without you will get that crispy nice crust. Let the dough rest for 15 minutes.
Sunflower oil for baking
■ Mix washed and chopped leeks, cilantro, spinach, parsley with garlic powder, chili pepper, coriander seedpowder and black peppers and salt
■ Mix grated pumpkin, onion and garlic with coriander powder chili pepper black peppers and salt.
■ Mix boiled potatoes with grated onion, black pepper and salt
Make small balls of dough. Rol the dough out until it is as thin as a tortilla. Place on one side of the circle the filling. Then in a large suitable pan with a little bit of oil on both sides until golden brown.
Serve warm with chutney and yogurt. Make more so you can also enjoy when cold. Cold bolani is also great! 😊👩🍳💚🧡💛
