💡🥕Carrotip: dont throw away carrotpulp after juicing!
We all know that carrots not only taste great but are also full vitamins and minerals. It supports healthy teeth, good bones and works as anti inflammation for lungs. And it is not only the juice that is healthy but the pulp is also full with fibers& minerals.
I regularly make carrot juice and used the remains of the carrots (the pulp) to make carrot cake or to make Afghan Carrot Halwa (soooooo good 🤤).
But as I’m trying to eat healthier and to use less sugar I am always looking for healthier alternatives.
So after you juiced the carrots instead of throwing away the pulp waste make this healthy and vegan snack 👇.
What you need:
– 400 g carrot pulp
– 100 ml of water
– 80 ml of orangejuice
– 100 ml of carrotjuice
– 1 tsp cardomam
– 1/2 tsp cinnamon
– 4 tbsp honey (+-)
– 3 tbsp chia seeds
– 4 tbsp of chopped hazelnuts
– 1 tbsp olive oil (for your hands)
How to prepare:
– Boil the carrotpulp with the carrot and orange juice and water on medium temperature until soft and the moisture disappears. For about 20 minutes. Stir regularly. -Add 1 tbsp chia seeds (as a binder) , 2 tbsp of hazelnuts, honey, the cardomam and cinnamon stirr well and boil another 2 minutes. Allow to cool.
– Grease your hands with olive oil and make small balls, as decoration and for extra crunch I dipped the balls in chia seeds and hazelnuts.
-I served this tasty and healthy snack with Afghan Saffron tee and dried roses.😊👩🍳🧡
