Delicious rice with almonds and fried chicken. Perfect for a dinner party / mehmani. This is a Syrian inspired recipe.
– 4 cup of best quality basmati rice
– 3 liters of boiling water
– 3 tbsp salt
– 1 tbsp of rice herbs
– 2 beef stock cube
– 50 g almond
– 1 kilo Chicken drumsticks
– 1/2 tbsp turmeric
– 1/2 garlic powder
– 100 ml vinegar
– 1 tbsp salt
– 1/2 tbsp pepper
– 100 ml sunflower oil
Start with marinating the chicken legs for a couple of hours with salt, pepper, turmeric, garlic and vinegar. Then you need to wash and soak the rice for a few hours for the best result. Do the same with almonds. After soaking, peel the almonds and pet them dry before frying in a bit of oil.
Take a large pan add plenty of water with salt bring to boil. Then add the rice and bring to boil until the rice is al dente.
Fry the chicken in a bit of oil then add water and let it simmer for about 10 minutes with the lid closed.
In another pan layer the almonds then the chicken then the rice. Add the herbs, oil, stock cubes dissolved in water. Steam the rice with the lid closed. Use a heat devider and steam the rice for 25 -30 Minutes.
To serve use a large round plate put on the rice pan then flip the pan. Enjoy.😊👩🍳💙
