🥘 Dopiaza 🇦🇫 ( دوپیازه )Under 30 minutes
👩🍳 Dopiaza is a popular Afghan lam dish (often served at dinner parties or weddings) cooked with onions and garnished with raw or fried onions. Because onions are added at two stages during cooking is the name “Do Piaza” (meaning two onions).
👩🍳And what I really like about this dish is that is so easy & quickly ready (if you have a pressure cooker 😆. If you dont go buy one and thank me later).
Ingredients for this dish:
2 kilograms of lamb (with bone)
2 kilograms of white onions (you can use more onions if you like. Upto 4 kilograms for 2 kilograms of meat. The more onions the more taste you get)
1 cup of water 200 ml
100 ml of white vinegar
1 tbsp turmeric
1 tbsp coriander seedpowder
1 tbsp garlic powder
1 tbsp black peppers
1 tbsp salt
2 red onions
Cook the lamb with half of the onions the herbs and 200ml of water and 50ml vinegar in the pressurecooker for 15 minutes. *
In another pan fry the rest of the onions with 2 tbsp oil until golden brown. Then add the cooked meat and a few spoons of the bouillon (the broth/ “meat water” which is over from cooking the meat in the pressure cooker)
Add again 50 ml of vinegar and put the pan in the oven for 10 minutes on 180 degrees. 🥄Pour the rest of the bouillon in a serving bowl. 🍽
Then finally serve the Do Piaza with bread, red onions in vinegar, some vegetables and the bouillon. You can also serve it with rice if you like.🍴 That easy! Enjoy and let me know (tag or print screen the result 📸) if you tried out.
* see my Shurwa post for more instructions on using the pressure cooker.
