Eggplant and zucchini curry (قورمه بادنجان با کدو سبز)
🍜😍This is one of my favorite vegan summer meals. Nice, healthy end delicious.
Very easy dinner,You just give it a try!😋
– 3 small eggplants
– 1 zucchini
– 1 tomato
– 1 red pepper
– 3 turkish green peppers
– 1 tbsp paprika pasta
-“Few cloves of garlic
– couple of dil
– 2 spoon of onion *or two pieces of onion
– 100 ml olive oil
– 100 ml of water
– 2 cubes of vegetable stock
How to prepare:
Wash all ingredients.
Finely chop all other ingredients. The Eggplants(Peeled eggplant) and zucchini should be 2 cm thick,
In large pan add oil with onions until golden brown then add the eggplants.
Cook for few minutes then add all other ingredients with cubes in water.
Stir well, close the lid and put on low temperature and let simmer.
After 15 minutes it’s ready to eat.
Served with bread and *yogurt sauce
that can be served warm or cold.
