🧡Shol-e-zard. A sweet saffron and rose water flavored rice pudding. Here is how you can make this dish. For religious nazr (thanksgiving /pledge) for Muharam or as a dessert.
-400 g risotto rice
-450 g of sugar
-100 g peeled almonds and pistachios (keep a few for decoration)
-50 g butter
-50 g sunflower oil
-1 tbsp grounded cardomam
-50 ml of rosewater
-1 tbsp natural orange food color (range shiren)
– Saffron-grounded 1/2 tbsp (mix it with 1 tbsp of warm water)
– pinch of salt
– Few almonds and pistachios
– Cinnamon powder
– Pair of roseflowers
Total cooking time about 1 hour and 15 minutes.
Here is how you make this delicious recipe:
Wash the rice and soak it or a few hours. Then pour 1 liter of cold water in a large pan, add the rice, orange food coloring and a pinch of salt. Bring to boil and scoop off the foam. Then add the butter and cook at medium temperature. Stir regularly and let the rice become soft.
Next step add another 800 ml of hot water to let the rice become a porridge add the saffron, almonds, pistachios and sugar * and stir well. Let it simmer at low temperature for at least half an hour and stir regularly. At last add prefarable hot oil and rose water and stir again. Cover with a cloth and close for 10 minutes.
*It is very important that rice is soften enough before you add the sugar otherwise your rice will not become soft. That I learned from my mother💖🤲.
Pour onto plates and garnish with almond, pistachio and cinnamon powder.enjoy 😊👩🍳🧡
