👩🍳😊 So here is my specialty: Khajoor خجور
This delicious Afghan pastry is best known in the Northern Afghanistan and usually made for festive occasions.
It is easy and within 1 hour you can have a large bowl of this yummy goodies.
The traditional recipe consists of yeast and 1 glass of oil. But in my recipe I use very small amount of oil and leave the yeast out. This also prevents the dough to take up lots of oil during frying.
– 1 kilo of flour
– 2 eggs
– 200 ml of whipped cream (قیماق)
– 200 ml of cold water
– 150 g of sugar
– 3 packets of vanilla sugar
– 1 packet of baking powder + 1 tbsp white vinegar
– 1 tsp cardomam
– 1 tsp nigella seeds(سیاه دانه)
– 1 tbsp oil for the dough
– 800 ml sunflower oil for frying
First mix the eggs with sugar, whipped cream add the cardomam, nigella seed and water well until the sugar dissolves. Then flour and baking powder, Pour the vinegar above the baking powder and mix all ingredients into dough.
At the end add a tablespoon of oil to the dough and let rest for a few minutes.
Then make like shown in the video small balls. By slightly pressing the balls in the sieve you shape the khajoor.
To fry the khajoor make sure the oil is hot leave it at midum temperature while you fry the khajoor until golden brown.
I always prepare a lot because you can keep these goodies for a long time and you can also store it in the freezer. Enjoy 😊👩🍳🧡
