🧡Spicy Vegan pumpkin Cookies  with Mint Chatni

This my own original recipe which I am proud of. These vegan pumpkin cookies don’t only taste good, but are also an elegant and a healthy starter 😊😎

Ingredients: 
– 200 g grated pumpkin
– 4 shallots / small onions
– 2 cloves of garlic
– 1 tbsp pistachio and pumpkin seeds
– 1/2 tbs black pepper
– 1 tbs turmeric
– 1/2 red chili pepper
– 1 tbsp salt
– 4 tbsp corn flour
– 1 tbsp chatni *See super food trio post
– few fresh rosemary and coriander
– 1/2 tbs cayenne pepper
– 3 white toast bread⁣
– half cup of water
– 1tbsp vinegar
– a bit of vegetable oil for frying

How to prepare:
Slice the onions in thin pieces and mix with grated pumpkin, grated garlic.
Wet the bread with water and vinegar for a while then mix everything well.
After mix everything with corn flour, make round cookies then fry the cookies with little oil on medium heat. The oil should not be too hot. Keep frying the cookies until they get crispy and golden brown of color.

How to prepare:
Sprinkle himalayan salt with pistachio and pumpkin seeds on top of the cookies.
Serve with mint chutney

For mint chutney:
– small bunch of mint (only leaves)
– couple of garlic
– 1 green chili pepper (without seeds)
– half red chili pepper (without seeds)
– 1/2 cup vinegar
– little salt
