Time for a simple recipe! Potato with vegetables.
For a colorful vegan vegetable bowl ready under 15 minutes!
Ingredients: -Potatoes (as per choice)
-2 small onions
-2 cloves of garlic
-Half bell pepper green& yellow
-1 red pepper
-Handful of tomatoes
-3 tbsp olive oil
-A vegetable cubes
-Few leaves of cilantro or parsley if you like
-Fresh ground black pepper
Peel the potatoes and cut evenly and cook in water with pinch of salt until tender, then drain it and add the tomatoes in de pan to steam it slightly with the potatoes.
In a separate pan fry the onions lightly brown, stir the peppers (cut into strips) and then add all other ingredients.
To add extra flavor add my regulary used secret ingredient 😁. Mash a vegetable stock cube with water and add it to the pan. Stir everything well for 5 minutes on low temperature, then add the potatoes and tomato and stir gently.
Serve with coriander or parsley leaves and freshly ground black pepper.
