Today on the menu:
Stuffed zucchini with Couscous salad
Step 1 For the stuffed zucchini you need:
100 gram minced lamb
2 tbsp breadcrumbs
Half red paprika
2 garlic cloves
Some coriander, parsley
Half tsp of salt, pepper, red chili, corianderseeds, tumeric
2 tbs olive oil
Chop everything fine, rasp the carrot for best result. Finally mix the ingredients for the stuffing.
Cut the zucchini lengthwise in half, spoon it out. Drizzle some oil and add salt & pepper. Then dived the stuffing into 4 parts (25 gram) and put it in the zucchinis as shown on the pictures. Lastly bake for 35 min in preheated oven on 180 degrees.
Step 2 for the salad you need:
50 gram Couscous
1 red onion
50 gram white cheese (fetakaas)
Salt, red & black pepper, garlicpowder
Put the couscous with 100 ml of hot boiled water and herbs into a bowl and let it absorb.(put a plate on the bowl). After 10 minutes fluff it with a fork add the dressing: lime and olive oil.
