Uzbek Qabeli Palau, finger licking ONE- pan dish!
Qabeli THE most popular rice in the Afghan cuisine. This Uzebeki version is SOO good you will lick your fingers off.
Unlike Afghan Qabeli, which you make with Basmati rice, for this special Uzebeki version you should use risotto rice. Also you need a cast iron (gietijzer) pan with thick bottom. A thick wok pan will do too. And this ONE- pan dish is all about stacking the ingredients in the right order.
600 g risotto rice
1 kg of lamb
4 medium white onions
Or you can use HUTSPOT chopped carrots & onions from @jumbo 😉
150 ml of sunflower oil
100 g of raisins
100 g cooked chickpeas (from a jar)
1 whole garlic
1/2 tsp kurkuma
1 tbsp salt
1 large tablespoon of ricespices
1 beef stock cube
4 glass of water
The water amount may more or less vary as it depends on the quality of rice (the rice should be sticky but not like risotto).
First some preparations.
Wash the rice with cold water for 10 minutes. Rinse the raisins, the garlic bulb and the carrots. Then jullien cut the carrots into thick strips. Proceed as shown on the photo. Chop also the onions into small cubes.
Step 1 frying the meat
Add the oil to the pan and fry the onions until they turn dark golden brown then add the meat. Fry the meat for about 5 minutes then add 2 glasses of boiling water, salt and riceseasoning. Allow to cook for 10 minutes.
Step 2 stacking the ingredients
For the next step add to the meat the carrots and then the raisins. Add the rice. Dissolve the stock cube in 200 ml of hot water and pour it over the rice. Do not stir! Place the garlic in the middle of the rice and finish with the cheekpeas. Add some kurkuma & without stirring press the rice down until water comes above.
Step 3 cooking the rice
Close the lid and leave for 10 minutes on medium temperature.
Step 4 steaming time
Open the lid, gently stir the rice and add another 200 ml of warm water. Make a few holes with the other side of a spoon for the steaming.
Then close the lid, lower temperature use a flame divider and let the dish steam for another 30 minutes. Serve it in a large plate & Enjoy! 😁👌 like & share🧡
