Vegan Qabeli palauw [pilav]
Qabeli is a popular and tasty dish with basmati rice, lamb، raisins, almonds & carrots. Here is a meatfree version with apricots just as tasty as the original qabeli. Ready in 30 minutes.
300 g basmati rice
80 g raisins
50 g almond
150 g carrots
Few dried apricots
5 tbsp of sunflower oil
2 vegetable broth
Rice Spices (cinnamon cumin cloves)
Tip: I prefer the ready to use “Hutspot” 500gr (onions & carrots) to save time 😏
First wash the rice with cold water and then soak it in a large bowl of warm water for several hours. Use a pan with thick bottom. Heat the oil in the pan, fry the onion until golden brown, then add the carrots and fry them shortly. Now add the rice with 600 ml of hot water with the vegetable stocks and rice spices.
When the water is boiled lower the temperature to the lowest and put the lid on. When the water evaporates, stir the rice carefully and add the raisins, almonds, and apricots. Put the lid on and leave again for 15 minutes and now its ready to eat.Enjoy 👩🏼🍳💙😊 (original recipe)
